Here's my version of the London Broil, simple and quick to cook, after marinating overnight. Note: if you have a blacktop grill at home as I do, you could use that instead -- just grill it for 7 minues or so on each side.
3-4 servings depending on size of skirt
1 flank steak (around 1 pound)
For the marinade:
1/4 cup olive oil
1/4 Balsamic vinegar (I recommend the sweet kind, such as fig balsamic vinegar)
1 teaspoon garlic powder
1 teaspoon dried oregano leaves
1-2 teaspoons of Worcestershire sauce
1. Mix all marinade ingredients altogether. Put steak in a large plastic bag, then pour the marinade into the bag. Put in fridge to soak overnight. (You could marinade for several hours, but the longer, the better.)
2. Pre-heat the broiler. After draining off the marnade, put the steak in a roasting pan, on the top of a wire rack. (Covering the pan with foil beneath the rack will save the headache of cleaning the pan.) Season the steak with salt and pepper.
3. Cook the steak for 6 minutes per side, totalling in 12 minutes.
4. After taking the steak out of the oven, let rest for a few minutes before cutting up the steak and serving.
