Roast Pork Tenderloin with Quick Chipotle Cream Sauce

 This is a great, easy recipe that takes only half an hour. One awesome thing about pork tenderloin is that it takes only 20-25 minutes to roast, and you can make the smoky-spicy sauce in a saucepan which takes minutes while the pork is a-cookin' away in the oven. You can use plan pork tenderloin or one of these flavored pork tenderloin like peppercorn-garlic -- I won't judge you. :-)  Note: if you can't find La Costea diced chipotle sauce (Walmart and supermarkets catering to Hispanic customers should have it), you can use canned chipotle instead. Take 2 or 3 peppers out of the can along with some of the sauce and mash them altogether in a small bowl.

Serves 4

Ingredients:

1 pork tenderloin (1 lb or so)

salt and papper (not needed if the pork tenderloin is already flavored)

1/4 cup La Costea diced chipotle sauce or mashed chipotles as mentioned above

1/4-1/2 cup cream or half-half

1) Preheat oven to 425 degrees

2) If the pork tenderloin is plain, season it generously with salt and pepper all over

3) Put the pork tenderloin (with silver skin up) on a roasting rack on top of a cookie sheet or a roasting pan (Note: many recipes for pork tenderloins usually recommend that you sear the pork first in a skillet before roasting it, but this isn't always ncessarily.  Besides, the pork still tastes good without searing. Besides, it saves time, anyhow.)

4) Put the pork in the oven and roast for 20-25 minutes or until it reaches an internal temperature of 150 degrees for medium-rare.

5) While the pork is cooking, pour the chipotle sauce into a small saucepan and start with 1/4 cup of cream. If you want less spicy, add more cream and be sure to taste. Cook at low heat, stirring occasionally and let it simmer a bit for about 5 minutes.

6) When the pork is ready, take it out of the oven an dput it on a large plate or cutting board, and let it rest for a few minutes before you slice it up.

9) Sppon the sauce over the slices of pork tenderloin and serve. Bon appetit!
