Salsa Verde Pork Stew

 As I've mentioned in a previous post, pork stew meat is a great value, and here's another very tasty recipe for pork stew with Mexican flavors, that uses Herdez's salsa verde. In fact, this recipe is based on a similar recipe on Herdez's website with a few tweaks of my own.

Serves 4 or  more

Large pot or dutch oven with tight-fitting lid is needed

 

Ingredients:

1+ pound pork stew meat

salt + pepper

2-3 tablespoons cooking oil

1/2 yellow or whie onion chopped

3-4 garlic clobes, diced

1 celebry stalk, diced

1/2 teaspoon ground cumin

1 10-oz can of Rotel tomatoes (hot, original or mild, depending on how spicy you want it)

1 whole 16 oz bottle of Herdez salsa verde

1 green bell pepper finely chopped

 

1) Heat oil in the pot over medium-high heat.

2) Season the pork with salt and pepper, and then sear them on all sides in the pot. Then put the pork aside on a large plate, keeping the grease in the pot. (Note: if any of the pork pieces are bigger than bite-size, I suggest you cut these into smaller pieces.)

3)  Lower the heat and add onions (and a little more oil if need be). Cook until the onions are almost translucent, and then add garlic and cumin. Stir for a couple of minutes. Then add the Rotel tomatoes and continue cooking for a couple of minutes.

4) Add the pork pieces back in the pot and toss them in the tomato mixture.

5) Finally, dump the whole bottle of the salsa in the pot, along with the green pepper pieces, and continue stirring.

6) Turn the heat up to medium-high, and bring it up to a simmer. Once it's simmering, put the lid on the pot and lower the heat to medium-low. Cook for half an hour or so, until the pork is tender.
