Ginger Pear Salad

Do you have that pear (or peach) that is getting a bit old and starting to soften? No need to throw it out -- here's a tasty and quick recipe to make use of that fruit. Please note that this recipe requires either fresh ginger, or minced ginger that comes in a jar or tube that you can find in the produce department -- using ginger spice may not work here.

Serves 2


1 pear (or peach) chopped into small cubes
1-inch ginger piece, grated (or a spoonful of jarred minced ginger)
1/2 tablespoon of honey
1/2 tablespoon of sherry vinegar or just enough to dissolve the honey
1/2 teaspoon garam masala or ground cumin

Combine ginger, honey, vinegar and spice and then toss the fruit pieces in the dressing. Serves 1 or 2.

This recipe's dressing also works well with freshly grated carrots (2 small carrots or 1 thick carrot) as well.
